Is this Organic?

The cattle are 100% grass fed, not certified organic. In terms of the health benefits, what you want to look for most is that the beef products you use are fed their natural diet and pasture raised, without contaminants, sprays, antibiotics, hormones, and other harsh chemicals. 
Grass fed means the animals are allowed to roam freely and eat a natural diet, never being fed grains.
Organic label doesn't so much describe how the cattle were raised as much as defining how they cannot be raised.  (Cannot be overcrowded, kept in lots for extended periods of time, or exposed to contaminants and chemicals.) These are essentially the exact conditions, by default, of our grass fed, pastured beef. 
 "Organic" beef can, however, and often do, get fed organic grain.

Can this be used to thicken coffee to a nectar consistency?

Yes, you can use it to thicken hot beverages. But, you want to soak it in cool water first, or it may get clumpy. Add it slowly, too much will make it coffee jello!

whts the difference between this and the hydrolyzed collagen from this company. i want the most effective one for joints and building collagen?

Collagen and Gelatin are made from the same source and nutritionally similar,  however, Gelatin Gels and Collagen dissolves.   Hydrolyzed Collagen is Gelatin bathed in natural enzymes so that it will dissolve in liquid where as Gelatin is not hydrolyzed and will Gel.  Gelatin can be used as a thickener, to make gummies and pudding deserts, etc. and Hydrolyzed Collagen can be easily added to any liquid.
