Why is the pack of two more than 4 times the price of one?

How many pizza pans will this hold?

Not to be a wise guy but I'm not sure I have ever seen a pizza pan. It will hold up to 7 hotel size cookie sheets, if thats any help.

can you stack these on top of each other?

They are flat topped so yes. The only problem I have is the pans fit extremely tight and are almost impossible to get in...I literally can't use mine as intended I turn mine one its side and can get a couple pans in they do keep food toasty warm.
