Does this contain cellulose?

IMHO I really doubt it. This Parmigiano Reggiano is the real deal sourced in Italy where traditional authentic cheeses are highly regulated by law both for local consumption and export. Rich and creamy on pizza, pasta etc. Apart from the popular green can (blech !) type found everywhere, this authentic Parmigiano Reggiano is ground fresh from a Parmigiano Reggiano wheel and contains no additives to prevent clumping or molding so you may find yourself fluffing the clumps with a fork a bit from time to time. Yes, I discovered a couple of small "cheese slivers". No problemo ! Use them or eat them. It just attests to the fact this cheese was hand grated fresh before shipping and does not take away from the quality for me in the least. ONe pound lasted in my fridge about three weeks or so before molding got out of control so plan to consume within 3 weeks. I had about 1/2" left in the bottom of the container. Shipped with a cold pack to help keep cool during shipping. Arrived in good shape after traveling from NY to Washington State. On second thought you can email or call Frank and Sal Italian Market who grate sell this product. Obviously must be refrigerated, but long will it last in the refrigerator without going bad?  Can I freeze the unused part?

3 to 5 months I did not freeze it

Since this might be 2 years worth of parmesan cheese, how do you store it, so you freeze it?

We use it more frequently and just refrigerate

Has anyone frozen portions of the cheese to keep it fresh

I did not freeze this grated cheese.  Might take a small portion and try freezing it to see what you think?  If you have some form of seal a meal is the way I would try.
